The Philippines & Filipino Food
The present day Filipino is the product of both East and West, reflecting Malay and Chinese influence followed by 300 years of Spanish, then American rule. The merging of different cultures brought forth many changes in the Philippines, influencing not only traditions and art but also culinary practices.
Fusion technique in cooking existed in the Filipino kitchen long before Ferdinand Magellan discovered the Philippines in 1521. While “fusion” has been popularised by modern chefs and dubbed by some as “East Meets West,” the original concept was adopted by Filipinos as a result of migration and colonisation.
Thus, the different dishes presented in this menu reflect the blending of cultures. Here you will find the best of Oriental and Western cuisine in dishes which have become distinctly Filipino.
